    The domain

    It is a family estate of about 15.5 ha of vines located in the northern part of the Côte de Beaune (Chorey, Savigny, Aloxe-Corton and Ladoix) in Ladoix, bordering the Côte de Nuits. The production is mainly red, 13.5 ha of pinot noir, 1.5 ha of chardonnay, 0.5 ha of aligoté. The estate is managed by Pierre, Edith his wife, and Emmanuel his cousin. Edmond, retired, brings his precious support, by his advices and his help.

    Respectful of the environment, plants and people, the estate obtained the "Agriculture Raisonnée" qualification in 2007. In this philosophy, the vine develops in harmony with the environment in which it lives (flora and fauna) allowing the production of high quality, healthy and ripe grapes. As a result and in the same spirit, the winemaking process does not need any artifice to produce quality wines with a beautiful personality.

    Terroir and breeding

    Located in the commune of Ladoix, the place called "Les Carrières" is oriented east, south-east). On the border of Corton and Corton Charlemagne, on a very thin stony soil. Sheltered by an old front the size of a former quarry, this parcel benefits from a very special microclimate. The heat of the sun, stored in the rock, is diffused after sunset, which is necessary for an exceptional maturity.

    The grapes are harvested by hand and taken to the winery in crates. The harvest is completely destemmed. Fermentation in vats for 18 days. The vinification allows to obtain elegant and fine wines. After pressing, the wines are taken down into barrels in the cellar to be matured for 18 months. Racking is carried out to separate the lees that form at the bottom of the barrels during maturing. Before bottling, a final racking is carried out to unify the cuvée. Only a very light filtration is carried out before bottling.

    Tasting notes

    The wine produced is robust, with a supple structure, complex and ample. It bears a certain resemblance to the Corton Rognet neighbourhood. It goes perfectly with game, marinated meats and mature cheeses.
