The domain
Located in Nuits-Saint-Georges, the Domaine Philippe Gavignet is a family business that has had five generations of winemakers.
Philippe Gavignet, who runs the estate, is assisted by his two children Elodie and Benoit. The estate produces 16 appellations, mainly reds, but also a few whites and a rosé.
The estate has been practising sustainable viticulture for many years, and in 2020 obtained its High Environmental Value (HVE) level 3 certification. Thanks to the immense talent of Philippe Gavignet, the Domaine produces greedy, fruity wines with great ageing potential.
Terroir and breeding
The Clos de l'Hermitage is located at an altitude of 300 to 400 metres. The vineyard occupies the slopes of the valleys incising the Jurassic limestone plateaus, to the west of "the coast". The substratum is identical to that of the coast, but the surface formations are very thin, or even non-existent. The clay-limestone soils result from the alteration of the limestone and marl of the substratum.
Vinification in stainless steel vats for 15 days (with cold maceration for 5 to 6 days) Aging: in barrels, 1/5 of which are new, for 12 months.
Tasting notes
The colour is purple or dark ruby. The nose reveals raspberry, cherry, liquorice and sometimes even violet. In the mouth: the flavour is frank and firm, the tannins are pleasantly mature. It is a full-bodied wine but without excess.
This excellent Hautes Côtes de Nuits will go well with white meats, such as rabbit, but also lamb and duck, or with very lightly spiced cuisine, savoury/sweet dishes (duck with orange, tajines...), or cheeses (mature soumaintrain, nuits d'or, farmhouse reblochon, morbier).
