The domain
Denis Valdenaire took over the family estate (from his father-in-law) in 2000, having worked alongside him since 1987. Today, he and his wife Edith, run the domaine, in a magnificent setting in Russilly, laid out like an amphitheatre and enjoying a beneficial micro-climate. After his professional training in Beaune, Denis Valdenaire has been refining his wine growing skills and he is always interested in harnessing the knowledge of experts, particularly when this relates to his vineyard soils.
Believing in the benefits of working together, he belongs to a group which carries out studies and experiments on the local terroir, and which is currently looking into ways of reducing the use of phytosanitary products. This is because Denis Valdenaire’s viticulture is, above all, “reasoned”. The domaine obtained official “REASONED AGRICULTURE” certification in March 2008.
Terroir and breeding
The Lieu-dit "Les Galaffres" is a south-facing hillside, on a marly and limestone soil where the chardonnay expresses itself fully.
The grapes are pressed gently and for a long time in order to obtain the clearest possible juice. Alcoholic fermentation takes place for 90% of the harvest in vats and 10% in new barrels and lasts about 15 to 20 days; the wine that does not go into barrels remains in vats on the lees. The wines are blended (vat and cask) after malolactic fermentation, then filtered and bottled in August.
Tasting notes
Slightly golden when young, it evolves towards pale gold with age. It often has aromas of lemon, apple or dried fruit. On the palate, a certain liveliness gives it great freshness.
Accompanying dishes
Accompanies cold starters, cold fish or in a light creamy sauce and also as an aperitif.
